π₯ Zaatar Rolls
For a long time, Zaatar Rolls have my familyβs comfort snack. A batch only lasts for a couple of hours, thatβs if we donβt finish all the bites by βtrying themβ on the kitchen counter.
Ingredients
π 3 cups all-purpose flour
π 3 tbsp baking powder
π ΒΌ cup olive oil
π ΒΌ cup vegetable oil
π 1 cup orange juice
π pinch of salt
π 1 tbsp orange zest (~ 1 orange)
π ΒΌ cup chopped olives
π 2 tbsp chopped fresh thyme or 1 tbsp dried thyme
Preparation
π Heat your oven 175Β°C. Prepare a baking pan with parchment paper.
π In a bowl, whisk together the flour, baking powder, pinch of salt, chopped olives, fresh thyme, and dried thyme (if using). Mix well to evenly distribute the flavors.
π In another bowl, add the olive and vegetable oil, orange juice, and orange zest until well combined.
π Add the wet mixture to the dry ingredients, and mix using a spatula or spoon until a dough is formed.
π Flatten parts of the dough on a lightly floured surface using a rolling pin then roll to form a log. Once rolled, cut the log into even pieces and place them on the prepared baking pan.
π Place in the preheated oven and bake for about 20-25 minutes.
π Serve warm, at room temperature or even cold.
