πŸ₯„ Zaatar Rolls

For a long time, Zaatar Rolls have my family’s comfort snack. A batch only lasts for a couple of hours, that’s if we don’t finish all the bites by β€œtrying them” on the kitchen counter.

Ingredients
πŸŒ€ 3 cups all-purpose flour
πŸŒ€ 3 tbsp baking powder
πŸŒ€ ΒΌ cup olive oil
πŸŒ€ ΒΌ cup vegetable oil
πŸŒ€ 1 cup orange juice
πŸŒ€ pinch of salt
πŸŒ€ 1 tbsp orange zest (~ 1 orange)
πŸŒ€ ΒΌ cup chopped olives
πŸŒ€ 2 tbsp chopped fresh thyme or 1 tbsp dried thyme

Preparation
πŸŒ€ Heat your oven 175Β°C. Prepare a baking pan with parchment paper.
πŸŒ€ In a bowl, whisk together the flour, baking powder, pinch of salt, chopped olives, fresh thyme, and dried thyme (if using). Mix well to evenly distribute the flavors.
πŸŒ€ In another bowl, add the olive and vegetable oil, orange juice, and orange zest until well combined.
πŸŒ€ Add the wet mixture to the dry ingredients, and mix using a spatula or spoon until a dough is formed.
πŸŒ€ Flatten parts of the dough on a lightly floured surface using a rolling pin then roll to form a log. Once rolled, cut the log into even pieces and place them on the prepared baking pan.
πŸŒ€ Place in the preheated oven and bake for about 20-25 minutes.
πŸŒ€ Serve warm, at room temperature or even cold.
