Guinness Chocolate Cake

Ingredients

πŸŒ€ 1 cup Guinness Stout or Irish dry stout beer
πŸŒ€ Β½ cup unsalted butter
πŸŒ€ ΒΎ cup cacao powder
πŸŒ€ 2 cups fine sugar
πŸŒ€ ΒΎ cup sour cream
πŸŒ€ 2 large eggs + vanilla
πŸŒ€ 2 cups flour
πŸŒ€ 2Β½ tsp baking soda

Preparation
πŸŒ€ Heat oven to 175Β°C. Prepare a 9-inch pan with butter and parchment paper.
πŸŒ€ In a saucepan, combine Guinness and butter. Place over medium-low heat until the butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.
πŸŒ€ In another bowl, combine sour cream, eggs, and vanilla; mix well.
πŸŒ€ In a third bowl, sift together the flour and baking soda.
πŸŒ€ Alternately add the flour mixture and sour cream mixture to the Guinness mixture, whisking until smooth.
πŸŒ€ Pour into the prepared pan and bake until risen and firm, 45 minutes to one hour.

Mascarpone Baileys Frosting

Ingredients
πŸŒ€ 1 cup Mascarpone
πŸŒ€ 1 cup heavy cream
πŸŒ€ 1 cup powdered sugar
πŸŒ€ Β½ Baileys Irish Cream
πŸŒ€ vanilla

Preparation
πŸŒ€ Add and mix all the ingredients until smooth and spreadable - using a food processor or by hand.

Assembly
πŸŒ€ Once chilled, remove cake from pan and place on a platter. Ice top of cake and enjoy!
