π₯ Guinness Chocolate Cake with Mascarpone Baileys Frosting
Small background story: I had this cake at Melt in Paris and it was a quick coup de coeur. I found a similar recipe online, modified it and added Baileys to the frosting. Feel free to make it alcohol-free if youβd like!
Guinness Chocolate Cake
Ingredients
π 1 cup Guinness Stout or Irish dry stout beer
π Β½ cup unsalted butter
π ΒΎ cup cacao powder
π 2 cups fine sugar
π ΒΎ cup sour cream
π 2 large eggs + vanilla
π 2 cups flour
π 2Β½ tsp baking soda
Preparation
π Heat oven to 175Β°C. Prepare a 9-inch pan with butter and parchment paper.
π In a saucepan, combine Guinness and butter. Place over medium-low heat until the butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.
π In another bowl, combine sour cream, eggs, and vanilla; mix well.
π In a third bowl, sift together the flour and baking soda.
π Alternately add the flour mixture and sour cream mixture to the Guinness mixture, whisking until smooth.
π Pour into the prepared pan and bake until risen and firm, 45 minutes to one hour.
Mascarpone Baileys Frosting
Ingredients
π 1 cup Mascarpone
π 1 cup heavy cream
π 1 cup powdered sugar
π Β½ Baileys Irish Cream
π vanilla
Preparation
π Add and mix all the ingredients until smooth and spreadable - using a food processor or by hand.
Assembly
π Once chilled, remove cake from pan and place on a platter. Ice top of cake and enjoy!
