π₯ Honey & Olive Oil Cake
This is definitely not anyoneβs typical cake. The ingredients create a beautifully balanced rich flavor so make sure to use the best quality olive oil & honey for the best taste!
Ingredients
π 1 cup plain yogurt

cup olive oil
π β
cup honey
π 1 tbsp chopped fresh thyme
π 1 tsp grated lemon zest
π 3 large eggs
π 1Β½ cups all-purpose flour
π Β½ tsp baking powder
π Β½ tsp baking soda
π pinch of salt
Preparation
π Preheat your oven to 175Β°C. Prepare a 9-inch round cake pan with parchment paper.
π In a mixing bowl, combine the plain yogurt, olive oil, honey, chopped fresh thyme, lemon zest, and eggs. Whisk together until the mixture is smooth and well combined.
π In another bowl, sift together the all-purpose flour, baking powder, baking soda, and a pinch of salt.
π Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula or a spoon until just combined. Be careful not to overmix; a few lumps are not bad.
π Pour the batter into the prepared cake pan the place the pan in the preheated oven and bake for about 30-35 minutes.
